Laid-Back Easter Sunday Dinner
Lexington-Style Grilled Chicken
2 cups cider vinegar
1/4 cup firmly packed dark brown sugar
1/4 cup vegetable oil
3 tablespoons dried crushed red pepper
4 teaspoons salt
2 teaspoons pepper
2 (2 1/2- to 3-pound) cut-up whole chickens*
Place half each of vinegar mixture and chicken in a large zip-top plastic freezer bag; seal. Repeat procedure with remaining vinegar mixture and chicken, placing in a separate zip-top plastic freezer bag. Chill chicken at least 2 hours or up to 8 hours, turning occasionally.
Remove chicken from marinade, discarding marinade.
Grill chicken, covered with grill lid, over medium-high heat (350° to 400°) 35 to 40 minutes or until done, turning occasionally. Serve with pasta and oven roasted asparagus.
Easy & Elegant Easter Menu
1 (8- to 9-lb.) fully cooked, bone-in spiral-cut ham half
1 1/2 cups firmly packed dark brown sugar
1/2 cup cola soft drink
1/2 cup Dijon mustard
1/2 teaspoon kosher salt
Preheat oven to 350°. Place ham half, cut side down, in a heavy-duty aluminum foil-lined jelly-roll pan; let stand at room temperature 30 minutes. Brush 1/2 cup desired glaze over ham. Bake, uncovered, on lowest oven rack 2 1/2 to 3 hours or until a meat thermometer inserted into thickest portion registers 140°, basting every 30 minutes with 1/2 cup glaze. Remove from oven, and spoon pan drippings over ham. Let stand 10 minutes. Serve with a hot potato salad, roasted carrots, and warm rolls.
