It is the beginning of a New Year and everyone is making plans to do better, eat better, and live better. Choosing a strict diet can be a bit dramatic and many times end in failure. At Savory Catering we want to encourage you to be fueling your body with the nutrients you need. Many times vegetables get overlooked or forgotten and we want to remind you of a few that are not only delicious but great for you.
Spaghetti squash is a good source of vitamin C, vitamin B6, and manganese. It is a fair source of niacin, pantothenic acid, and potassium. After it is cooked, you can separate the flesh into thin strands somewhat similar to spaghetti so it is a great substitute for pasta. Spaghetti squash is higher in nutrients and way lower in carbohydrate and calories than pasta is.
Asparagus is high in vitamin K and folate and is high in anti-inflammatory nutrients as well as provides a wide variety of antioxidant nutrients, including vitamin C, beta-carotene, vitamin E, and the minerals zinc, manganese and selenium. It’s also especially rich in glutathione, a detoxifying compound that can help destroy carcinogens. For this reason, asparagus may help fight or protect against certain cancers, including bone, breast, lung and colon cancers.
Carrots are packed with health-promoting beta carotene, they promote good vision. Carrots also have a large amount of antioxidants and other nutrients. Along with the antioxidant benefits, they also have cardiovascular benefits, and anti-cancer benefits.
Making it a priority to consume vegetables on a daily basis is very important. Vegetables don’t have to be boring either. You do not have to serve these individually and make your kiddos choke them down. There are some great recipes and ways to serve these alongside other delicious ingredients.
