Cupcakes have been around for a very long time.  Before all of the little cupcake shops started showing up everywhere, most people knew of two flavors - chocolate and vanilla.  Now days there are so many delicious cupcake flavors available.  At weddings and big events there are typically always cupcakes involved.  Even if they are just chocolate and vanilla they are typically named something a bit more fancy like Bourbon Cream Vanilla or Dark Chocolate with a Ganache topping.

Cookies & Cream Cupcakes

For cupcakes:

1 cup sweet butter, softened

1 cup superfine sugar

2 cups self-rising flour

1 tsp. baking powder

4 eggs

1 tsp. vanilla extract

10 crushed cream-filled chocolate cookies

For frosting:

3 cups confectioners’ sugar, sifted

1 cup sweet butter, softened

pinch of salt

10 chopped cream-filled chocolate cookies

Preheat the oven to 350.  Combine all cupcake ingredients, except the cookies, in a large bowl and beat with an electric mixer until smooth and pale, about 2 to 3 minutes.  Stir in the cookies. 

Spoon the batter into a cupcake pan.  Bake for 20 minutes.  Remove pans from the oven and cool for 5 minutes.  Then remove the cupcakes and cool on a wire rack. 

To make the frosting, beat the confectioners’ sugar, butter, and salt using an electric mixer.  Spread the frosting onto the cooled cupcakes and sprinkle the chopped cookies on top.
